Role & Responsibilities
- Oversee kitchen stewarding operations and coordinate staff across all satellite kitchen sections and food and beverage outlets
- Organize and prioritize kitchen equipment setup, maintenance, and cleaning schedules on daily, weekly, and monthly cycles
- Manage receiving, storage, and cleaning of kitchen facilities, including cold storage, back-of-house areas, ceilings, and air conditioning systems
- Develop and implement hygiene protocols and HACCP monitoring systems; organize training on food safety and sanitation standards for all kitchen staff
- Supervise waste management, chemical storage, and disposal procedures in compliance with health and safety regulations
- Schedule kitchen staff aligned with business levels to maximize productivity while controlling payroll costs
- Prepare department budget and capital expenditure plans; monitor daily expenses, spoilage, and wastage to meet financial targets
- Conduct inventory management, stock par-level controls, and monthly stocktakes in coordination with accounting
- Liaise with purchasing and suppliers to source materials and equipment at optimal quality and cost
- Maintain accident records, hazard reviews, and preventive maintenance coordination with the Engineering Division
- Chair regular departmental meetings and daily briefings with the Executive Chef, outlet managers, and food and beverage heads
- Support staff development through multi-skilling, performance evaluations, and employee satisfaction initiatives
Qualifications
- Proven experience as a Stewarding Manager or equivalent senior stewarding role in a luxury hotel or high-volume food service environment
- Comprehensive knowledge of kitchen operations, equipment, and sanitation protocols
- HACCP certification or ability to obtain certification
- Strong understanding of food safety and hygiene standards
- Budget management and cost control experience
- Staff supervision and training capability

Minimum 5–7 years of stewarding or kitchen operations management experience in a luxury hotel, fine dining establishment, or high-volume food service operation. Proven track record of cost control and budget management in food and beverage environments.
Education
Secondary education minimum; hospitality management certification or equivalent professional qualification preferred. Completion of HACCP training or certification required or expected upon hiring.
