Aman seeks a Food and Beverage Director to lead the administration and operation of the Food and Beverage Division at Aman Nai Lert Bangkok, overseeing guest experience, service quality, staffing, marketing, and financial performance. The role requires a diploma or degree in food and beverage or hospitality management and at least two years as a Director of Food and Beverage in an international hotel.

Role & Responsibilities

  • Oversee the administration and operation of the Food and Beverage Division to maintain quality standards, financial performance, profitability, staff performance, and guest satisfaction.
  • Maintain complete knowledge of the food, beverage, and service available in assigned sections.
  • Explain HACCP and Fire & Life Safety Standards to staff and ensure their correct application.
  • Monitor operations and ensure their smooth running; participate effectively in coordinating and controlling departments.
  • Conduct regular tours of front- and back-of-house Food and Beverage operations to review setup, service, food quality, general maintenance, and cleanliness.
  • Recommend improvements across assigned sections.
  • Conduct market surveys as required and plan accordingly; implement measures to increase market share.
  • Keep abreast of new technology and identify ways to improve work efficiency.
  • Coordinate with the Executive Chef and Outlet Manager on the setup, implementation, and sales of outlet promotions and menu planning.
  • Work with the Head, Executive, or Head Chef to establish standard recipes, specification sheets, and theoretical selling prices for food and beverage services in assigned sections.
  • Participate in staff management, including hiring, termination, transfers, and overtime; approve weekly staff rosters.
  • Motivate staff and foster team building; participate in divisional staff training and orientation.
  • Monitor individual staff performance, grooming, and punctuality, and conduct appraisals or disciplinary action when required.
  • Ensure staff have an appropriate working environment, tools, and knowledge to work productively and efficiently.
  • Ensure staff follow procedures and regulations on hygiene and sanitation, fire and safety, and emergency procedures.
  • Maintain sound knowledge of departmental standards and procedures, product knowledge, and all Food and Beverage menus; attend required training.
  • Maintain Aman Nai Lert Bangkok standards of attitude, behavior, and appearance.
  • Maintain regular guest contact to obtain feedback and develop future and potential clients; handle complaints properly and tactfully.
  • Conduct or attend Food and Beverage divisional and departmental meetings as required, and ensure effective communication between Food and Beverage and other hotel departments.
  • Meet regularly with key suppliers to discuss new products, issues with existing products, opportunities, and sponsorships.
  • Ensure consistent quality of food, beverages, and service.
  • Ensure materials, equipment, and machinery are used properly and cleaned regularly to prolong their useful life.
  • Participate effectively in and control inventory taking, costs, and breakage.
  • Use food, beverage, and paper supplies, electricity, and water economically.
  • Manage the division’s budget, forecast, CAPEX, and P&L; implement measures to improve control of costs, expenses, and labor.
  • Prepare the monthly Food and Beverage Division report, if applicable; maintain systems for compiling guest critiques, business cards, and guest letters; authorize the daily outlet logbook.
  • Achieve good guest interaction as a representative of Aman’s culture and traditions, guest satisfaction, individual productivity, and strong attendance and punctuality for work and training.

Qualifications

  • Diploma or degree in food and beverage or hospitality management.
  • Minimum 2 years of experience as a Director of Food and Beverage in an international hotel.
