Janu Tokyo seeks an Assistant Director of Food and Beverage to support the division’s strategic leadership and oversee operations across its dining and entertainment outlets, driving operational excellence, high-performing teams and guest satisfaction. The role supports budgeting, workforce planning, compliance and service standards, and requires extensive luxury hotel and restaurant leadership experience. Full-time position.
Role & Responsibilities
- Support the Director of Food and Beverage in overseeing daily operations across all outlets, ensuring guest satisfaction, service excellence and operational efficiency.
- Lead, manage and develop outlet management teams, maintaining high standards of professionalism, leadership and operational performance.
- Develop, implement and continuously improve departmental policies, service procedures and Standard Operating Procedures (SOPs) in line with company standards.
- Monitor operational performance, guest feedback, financial results and service quality, implementing corrective actions and improvement initiatives as needed.
- Support departmental budgeting, forecasting, financial planning, sales analysis, inventory management, labour productivity and cost control to achieve business objectives.
- Ensure compliance with applicable food safety, hygiene, health and safety regulations, as well as company policies and standards across all Food and Beverage operations.
- Oversee staffing, workforce planning, scheduling, performance evaluations, coaching, mentoring, succession planning and talent development initiatives.
- Conduct regular operational inspections and audits to ensure cleanliness, presentation, product quality, brand standards and service consistency across all outlets.
- Collaborate with the kitchen team and other hotel departments to support seamless operations, successful promotions and exceptional guest experiences.
- Support strategic planning, new initiatives, projects and departmental administration, and act on behalf of the Director of Food and Beverage when required.
Qualifications
- At least 15 years of practical experience in hotels and luxury restaurants.
- At least 5 years of practical experience in a luxury hotel environment.
- At least 3 years of practical leadership experience, such as as a manager.
- Practical experience managing multi-unit restaurant operations.
- Practical experience in budget management, sales analysis and cost control.
- Basic knowledge of labour management and practical experience with shift scheduling.
- Practical experience in performance management and talent-development coaching.
- Practical experience creating, improving and continuously monitoring SOPs.
- Excellent leadership and communication skills.
- Advanced business-level English proficiency (CEFR C1 or higher).
- Advanced business-level Japanese proficiency (CEFR C1 or higher).
- Advanced PC skills, including MS Office and typing.
- Candidates with exceptional experience or skills may be considered even if they do not meet every requirement.
